Mousetraps

Ingredients

  • 2 heaped tablespoons onion, chopped
  • 2 rashers streaky bacon, chopped
  • 3 cups cheese (I used mild today)
  • 1 egg
  • Salt and pepper
  • 1 tablespoon oil
  • 8 slices toast bread
  • Margarine or butter
  • Chopped parsley

Method

  • mousetrapt3Heat oil in a frying pan and add the onion and bacon. Cook until the onion is transparent.
  • Allow to cool slightly.
  • In a bowl mix cheese, egg, onion and bacon mix and season with salt and pepper. Set aside.
  • Toast one side of the bread.
  • Spread untoasted side with a little margarine or butter.
  • Spread a couple of spoonfuls of the cheese mix on to the untoasted side of the bread.
  • mousetrapt4Place on an oven tray and grill until golden brown. Garnish with chopped parsley and serve.

You can add anything you like to this mix. Fresh tomato is lovely and lightly cooked mushrooms are also delicious. It’s a great recipe to get a little experimental with 🙂
