Sweetcorn Fritters

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1 tin of corn kernels or 2 cups of frozen corn
  • Salt and pepper

Method

  • Sift the dry ingredients into a large bowl.
  • Make a well in the middle and break in the egg.
  • Add the milk and mix until well combined.
  • Drain the corn and add to the batter mixture.
  • Season with salt and pepper.
  • Heat 2 tablespoons of oil in a frying pan.
  • When hot, drop tablespoons of the mixture into the pan.
  • Cook until golden brown and crisp on both sides.
