Stuffed Baked Potatoes

Ingredients

  • 4 large potatoes suitable for baking
  • 1 tablespoon butter
  • ¼ cup Milk (or cream for extra yum)
  • 1 egg, beaten
  • 1 spring onion, finely chopped
  • 2 rashers of bacon, cooked and chopped into small pieces
  • Salt and pepper
  • ½ cup tasty cheese
  • Oil for brushing on the spuds

Method

  • Wash potatoes then brush with oil.
  • Bake for 1-1 ½ hours at 180°C, or microwave covered with glad wrap on high for 15-20 minutes.
  • Once cooked scoop out the flesh of the potatoes, trying not to break the skin.
  • Mash the flesh with the butter, milk and half the cheese. Mix the beaten egg in quickly. Add the spring onion, bacon and salt and pepper to taste.
  • Put mixture back into the potato skins and sprinkle the remaining cheese. Place back into the oven and back until the top is golden.
