Way healthier than fried chicken

There is nothing like fried chicken but the reality is sometimes our waistlines aren’t big fans of the extra fat calories. So any recipe that makes deliciously crunchy coated chicken gets a huge thumbs up from me. This recipe calls for the chicken to be baked on a rack in the oven so it’s not oily and is a much healthier option than its greasy cousin. The chicken was nice and was perfect served with a nice green salad and coleslaw. Not everyone was a fan of the orange rind in it but I think replacing the orange with lemon rind would definitely work in this recipe.

Just a little advice for when you need to use the crumbing technique. The job is much easier and the end result more consistent if you keep one hand for dry ingredients and the other hand for wet. It means the ingredients are also more likely to end up on whatever it is you are crumbing rather than all over you. It’s just a simple tip but it honestly makes the whole process so much easier.

So give this recipe a go. I would be interested to know if you guys like the orange rind or the lemon rind better.
