Sponge Roll

Ingredients

  • 5 eggs, lightly beaten
  • 1 level cup sugar
  • ½ teaspoon lemon essence
  • 1 level cup flour
  • 1 teaspoon baking powder

Instructions

  • Preheat oven to 200°C
  • Mix baking powder and flour together and set aside.
  • Beat eggs and sugar together until thick. Add lemon essence and then flour mix and mix again.
  • Spread into a sponge roll tin lined with baking paper.
  • Bake for approximately 15 minutes or until it springs back when touched lightly.
  • Once cooked turn out on to baking paper that has been placed on top of a tea towel and the paper has been sprinkled lightly with icing sugar. Roll up using the tea towel to help guide the paper and sponge.
  • Once cool unroll and fill with whipped cream and gently re-roll.
