Ingredients
- 5 eggs, lightly beaten
- 1 level cup sugar
- ½ teaspoon lemon essence
- 1 level cup flour
- 1 teaspoon baking powder
Instructions
- Preheat oven to 200°C
- Mix baking powder and flour together and set aside.
- Beat eggs and sugar together until thick. Add lemon essence and then flour mix and mix again.
- Spread into a sponge roll tin lined with baking paper.
- Bake for approximately 15 minutes or until it springs back when touched lightly.
- Once cooked turn out on to baking paper that has been placed on top of a tea towel and the paper has been sprinkled lightly with icing sugar. Roll up using the tea towel to help guide the paper and sponge.
- Once cool unroll and fill with whipped cream and gently re-roll.
