Peppermint layer
Ingredients
- 4 eggs
- 200 g white chocolate
- 2 tablespoons peppermint essence (add more or less according to taste)
- 1 tablespoon Caster sugar
- 300 ml cream
- Green food colouring if desired
Method
- Break up chocolate and melt in a bowl over a saucepan of simmering water until smooth. Allow chocolate to cool to lukewarm.
- Separate the egg whites and yolks. Beat the yolks into the cooled chocolate along with the essence.
- Beat the egg whites until soft peaks form. Add sugar and beat until thick and glossy. Set aside.
- Beat cream until soft peaks form. Fold egg whites and cream alternately into the chocolate mixture.
- Add a few drops of food colouring if desired.
- Spoon mixture into serving bowls.
Milk chocolate mousse layer
Ingredients
- 2 eggs
- 125 g milk chocolate
- 1/2 tsp vanilla essence
- 1 tsp caster sugar
- 150 ml cream
- Dark chocolate, grated
Method
- As for the peppermint layer but without adding food colouring.
- Spoon a layer on top of the peppermint layer
- Top with grated dark chocolate
- Chill thoroughly in the fridge before serving.
