I think in a lot of ways quiche gets a bad rap. It is one of those things that has been done to death and seems way too retro these days. I think most of us at some point have had a dodgy one too. Quiche often promises so much yet delivers so little.
The reality is that quiche is easy to make. It can be eaten hot or cold, with a crust or without a crust. They are so versatile and can be made with almost anything you have on hand. Many years ago when I was catering I would often be cooking for people with special dietary needs. Often people with compromised immune systems or suffering from serious illness. Their bodies could not cope with heavy meals, and it was times like that I would make a crustless quiche so that they still had something nice to eat that was yummy, light and not boring. Today I made the quiche recipe on Page 100. It was also a great opportunity to make the short crust pastry recipe on page 85.
Firstly, the pastry. The idea of making pastry is often worse than the actual execution. Pastry in particular short crust pastry is so easy it’s ridiculous. All you need is flour, butter, cold water and you are away laughing. This recipe is a good standard recipe that is really lovely. The only thing I want to stress is that when you make short pastry it is key to handle it as little as possible for good results. If it’s over worked it can become tough and lose the beautiful short quality that is important with this pastry.
It took me around 15 minutes to make and blind bake the pastry and another 5 minutes to make the quiche filling. The filling for this quiche is very easy. The good thing about this recipe is it is one you can put your own twist on by adding different proteins, vegetables, herbs, spices or even different cheeses to make it your own. You probably do want to have a play with different flavours because the general consensus was that the flavour was okay. Just okay. It’s very non offensive. It does need a little bit more pow! I think the next time I make it I will add a little more bacon and cheese to it for starters and maybe some tomato and parsley just to turn it up a notch.
I do recommend the pastry recipe for sure and I think the actual quiche recipe is a good basic one and well worth a go.
