Here we go…If you give me pumpkin soup it should be made with pumpkin!
If you add a potato it is not pumpkin soup! Its pumpkin-heavy vegetable soup *grumble*
Yes, I tested the pumpkin soup recipe today and yes, it had a large potato in it and yes the end result tasted like potatoey pumpkinish soup đ and yes, I did not like it :(.
The recipe involved cooking onion until clear and then adding in pumpkin, potato, and boiling. I have had a lot of pumpkin soups in my life, in fact itâs my favourite soup in the world – but this, my dear friends, tastes like bums (excuse my language). It really really does! It doesnât taste like pumpkin soup. Its flavourless. This soup made me so sad. ď
When I make pumpkin soup all I do is roast some pumpkin (seasoned with a little salt) until its nice and soft and caramelised (but of course not burnt), and then I blitz it with a little milk or chicken stock to loosen it up. I add more chicken stock and milk until I get a good soupy consistency. Its so simple it should be illegal and because the pumpkin is roasted it has a full pumpkin flavour. Yum!
Sometimes its good to be adventurous so if the mood takes you here is a recipe for pumpkin soup with a Thai twist (no, it doesnât have other vegetables in it pfffffft)
So thatâs my bugbear. I am most definitely a pumpkin soup snob.
