Apricot Marshmallow

Firstly I need to point out that this isn’t really marshmallow as such, but I get why they call it that. The texture is a very light, fluffy and aerated so it is sort of marshmallowy.

The recipe is another quick and simple recipe with very few ingredients. It doesn’t take long to set so makes a nice treat at the end of a meal.

apricotmarsh3I really liked the flavour, although canned apricots these days don’t tend to have as much flavour as they used to so it doesn’t have a huge apricot-y flavour. If you can get your hands on some bottled apricots then I think it would be the little bit of magic this recipe needs. apricotmarsh4The texture was also a little unusual but it wasn’t an issue really although younger family members weren’t convinced by it. The Edmonds does suggest an alternative version using bananas. I think it would be a better option for the young ones so will definitely be giving it a try.
