Ingredients
- 1 cup flour
- 1 tsp baking powder
- 1 egg
- 1 cup milk
- 1 tin of corn kernels or 2 cups of frozen corn
- Salt and pepper
Method
- Sift the dry ingredients into a large bowl.
- Make a well in the middle and break in the egg.
- Add the milk and mix until well combined.
- Drain the corn and add to the batter mixture.
- Season with salt and pepper.
- Heat 2 tablespoons of oil in a frying pan.
- When hot, drop tablespoons of the mixture into the pan.
- Cook until golden brown and crisp on both sides.
