Cupcakes and muffins are not the same thing *grumpy face*
Cupcakes became really trendy a few years back and people jumped on to the bandwagon. We suddenly saw baskets of cupcakes being sent instead of flowers and boutique cupcake shops popping up around the place. We also saw people icing muffins and try to pass them off as cupcakes. Shame on you!
A muffin is denser than a cupcake and should be lovely and moist. (Donβt even get me started on why icing a muffin is wrong) Cupcakes should be light and delicate in texture. Cupcakes are so easy to make and are perfect for any occasion. A cupcake can be dressed up or down
depending on the occasion. You can decorate them as much or as little as you like, what matters is the little cake underneath.
I have used the recipe on page 50 for many many years. It has never let me down and I know that I can multiply the recipe as much as I want and it still works. The recipe mentions variations all of which I have tried and all work very well.
These cupcakes are yummy and are a perfect way to entertain the sprogs on a rainy day. Decorating them is a great way to introduce them to baking. The ones shown have a Vienna cream frosting – click here for the recipe.
So this recipe is definitely a winner for me oh and did I mention they are really cheap to make? No need to spend $4.50 on a cupcake from a fancy cupcake shop π

I like icing… I like muffins… Ipso facto: iced muffins must be a good thing.
… I also like lasagne, therefore, iced lasagne with a muffin layer must be gourmet perfection.
