Tosca cake is a deliciously light buttery vanilla sponge type cake with a caramel and almond topping. Tosca cake or Toscakaka or Toscakake is claimed as a traditional cake by numerous Scandinavian countries but the one thing each country has in common is its love of this delightfully delicious cake.

The topping soaks slightly into the cake giving it a beautiful rich flavour.

The recipe on page 56 is a really good version of the cake. The important thing to concentrate

on when making this cake is keeping it light and airy. It is a fantastic way to practice your folding skills 🙂

 

This cake was so yummy that I had to make two because the first one was gobbled up quick smart. Must be the Scandinavian in the family!

Did I mention this is delicious?!

Definitely give this cake a try its really worth making and is a perfect accompaniment to a cup of coffee or even served with a dollop of yoghurt as a dessert. In fact I think I hear a slice calling my name so I am off to do some more “quality control” 😉
