Wednesday. Not quite the start of the week, not quite the end of the week. Today has been a long day. All day its felt like a Thursday but alas its only Wednesday. When I got home for the first time in a long time I didn’t feel like cooking dinner. Its days like today I have a couple of quick painless recipes I know I can throw together super quickly that I know people will happily eat.
So tonight I made something that when I was camp catering I named storehouse pizza. The reason was it was a great way to use leftovers at the end of the camp. It was always a big hit with campers. Its basically a scone style base topped with any leftovers you have. I usually cover the dough with a tin of spaghetti or tomato paste. You can then add anything you like.
At camp we often had sausages leftover from barbeque lunches so I even added chopped up sausages to it. Tonight I went with some cooked chicken, a little red onion, bacon and cheese. Yes I could have added some capsicum or other vegies but I am honestly feeling super lazy tonight. You can serve the storehouse pizza with a salad or even just eaten by itself it makes a filling meal. For the recipe for my basic storehouse pizza click here.
