Stuffed Tomatoes

Ingredients

  • 6 large tomatoes
  • ¾ cup soft breadcrumbs
  • 1 ½ cups tasty cheese
  • 2 spring onions, finely sliced
  • 1 clove garlic, crushed
  • 1 ½ teaspoons dried basil or 2 Tablespoons fresh basil
  • ½ cup chopped parsley
  • Salt and pepper

Method

  • Remove top from the tomatoes and then scoop out the insides. Remove the cores from the mix.
  • Add the remaining ingredients to the pulp. Season with the salt and pepper to taste.
  • Spoon this mixture back into the tomato shells.
  • Bake for 15 minutes or until the cheese is melted.
