Ingredients
- 6 large tomatoes
- ¾ cup soft breadcrumbs
- 1 ½ cups tasty cheese
- 2 spring onions, finely sliced
- 1 clove garlic, crushed
- 1 ½ teaspoons dried basil or 2 Tablespoons fresh basil
- ½ cup chopped parsley
- Salt and pepper
Method
- Remove top from the tomatoes and then scoop out the insides. Remove the cores from the mix.
- Add the remaining ingredients to the pulp. Season with the salt and pepper to taste.
- Spoon this mixture back into the tomato shells.
- Bake for 15 minutes or until the cheese is melted.
