Chicken is always a favourite food in my family, so the cheesy sesame-coated chicken on page 141 looked like a winner. One of the major ingredients is parmesan cheese so I made sure to choose a cheese with really good flavour. I chose Gibbston Valley parmesan. The rest of the ingredients are pretty straightforward. The recipe reads really well and it’s basically a “shove all the ingredients in a plastic bag and shake” kind of thing. The recipe says you can serve the cooked chicken hot or cold, so I tried it both ways. The chicken had more flavour when it was cold but to be honest the flavour is a non event either way. It ends up being a bit of a waste of time to be honest – there is no real flavour to it. Even the parmesan flavour is missing, I believe it is because there is so little in the recipe. If I was to make the recipe again I would put way more parmesan, stock and mixed herbs in it but the truth is I probably won’t be making this recipe again. There are way better recipes out there.
I served the chicken with stuffed baked potatoes. (Page 171) The recipe was really easy. It was just a case of baking the potatoes, scooping out the middle and mash with the other ingredients before refilling and baking for a second time. The main question that sprang to mind when gathering ingredients to make the baked potatoes was what the heck does a medium sized potato look like. It says 4 medium sized potatoes but its all relative isn’t it? Urgh. In the end I guessed but Im actually going to call a potato farm tomorrow and ask their thoughts. I will let you know how that goes 🙂
Back to the stuffed potatoes the only thing I had an issue with when it came to this recipe was the amount of milk seemed a bit much for the amount of other ingredients. Even if the potatoes were bigger I think the mixture would still have been really wet. However the end result wasn’t too bad. The inside was nice and soft and quite tasty. The recipe is worth a try and it really isn’t as daunting as the idea of stuffed potatoes can seem. If you would like to try my version of stuffed baked potatoes click here.
