Ingredients
- 4 large potatoes suitable for baking
- 1 tablespoon butter
- ¼ cup Milk (or cream for extra yum)
- 1 egg, beaten
- 1 spring onion, finely chopped
- 2 rashers of bacon, cooked and chopped into small pieces
- Salt and pepper
- ½ cup tasty cheese
- Oil for brushing on the spuds
Method
- Wash potatoes then brush with oil.
- Bake for 1-1 ½ hours at 180°C, or microwave covered with glad wrap on high for 15-20 minutes.
- Once cooked scoop out the flesh of the potatoes, trying not to break the skin.
- Mash the flesh with the butter, milk and half the cheese. Mix the beaten egg in quickly. Add the spring onion, bacon and salt and pepper to taste.
- Put mixture back into the potato skins and sprinkle the remaining cheese. Place back into the oven and back until the top is golden.
