Ingredients
- 3 eggs
- 1 cup sugar
- 3 teaspoons instant coffee dissolved in 1 tablespoon of water (add more coffee if desired)
- 1 large cup flour
- 1 teaspoon Baking powder
- 30 g butter
- 4 Tablespoons milk
Method
- Preheat oven to 200°C
- Before you begin line and grease a 20-22 cm cake pan.
- Heat milk until the butter has melted. Set aside while you prepare the rest of the mix.
- Beat the egg whites until stiff. Add yolks and beat again. Add the sugar gradually while continuing to beat the mixture really well. Add the coffee mixture, the sifted flour and baking powder. Mix really well. Add the heated milk and butter. Give one last mix.
- Pour into pre-prepared pan and bake for 17 minutes at 200°C.
Once cool ice with coffee butter icing.
