eggs2After posting the mayonnaise recipe I was asked what the egg whites could be used for and so I thought I would share some ideas of things that egg whites and egg yolks can be used for.

Egg whites

  • Meringues
  • Pavlova
  • Egg white omelette, healthy and delicious
  • Marshmallow

You can also freeze your egg whites. Once they are thawed back to room temperature they can be used exactly the same way as fresh egg whites. A good way to freeze them is to put the egg white of one egg in each cube space in an ice cube tray. Once they are frozen you can pop them out and transfer them into a snaplock bag ready for use whenever you need them.

Egg Yolks

You can also freeze egg yolks but the protein can break down which can make them go pasty when thawed. If you thoroughly mix one teaspoon of sugar with each egg yolk before freezing that will keep the egg proteins fluid. They too can be frozen in ice cube trays and then transferred to a snaplock bag.
