Beautifully Rich Chocolate Cake

Rich chocolate cake with chocolate icing.

Serves 10

Ingredients:

  • 125g butter, softened
  • 3 eggs
  • 2 cups Sugar
  • 2 cup flour
  • ¾ cup sifted cocoa
  • 2 tsp baking soda
  • 2 tsp vanilla essence
  • 1 cup sour cream
  • ¼ tsp salt
  • 1 cup strong black coffee (I make my cup with 2 tsps of good instant coffee eg: Maccona)

Before you begin, preheat the oven to 170°C. Line a 20-22cm round baking pan with baking paper.

Method:

cake6cake7Place all of the ingredients except the coffee into a bowl in the order they are listed in. Mix with an electric mixer until mixture begins to combine. Add the coffee¹ and then mix until completely combined.

Pour into the lined pan and bake for about 60-75 minutes or until it springs back when touched lightly.

Cool the cake for 15 minutes before removing from the pan.
When cool, ice with chocolate icing or chocolate ganache icing

¹ I usually make the cup of coffee just before I start putting the ingredients together. It means it’s still hot when added to the mix but because you are adding it half way through mixing the ingredients it doesn’t need to be cold.
